Pear Muffin Wet Ingredients

Instructions
- Preheat the oven to 400°F and prepare a baking sheet with coconut oil spray.
- Slice the Bosc pears in half and place them flat side up on the baking sheet.
- Spray the pears with coconut oil and pierce them a few times with a fork, then sprinkle with cinnamon.
- Roast the pears for 15 minutes, then flip and roast for an additional 10-15 minutes until tender.
- Let the pears cool for 15 minutes before removing seeds and skin, then blend with water to make a puree.
- Preheat the oven to 350°F and spray a muffin tin with coconut oil spray.
- Dice one large pear and mix it with the dry ingredients in a bowl.
- In a separate bowl, combine the pear puree with the wet ingredients and whisk until combined.
- Gradually add the dry ingredients to the wet mixture and mix until combined.
- Stir in the melted coconut oil and mix thoroughly.
- Fill the muffin tin with the batter and bake for 18-20 minutes until cooked through.
