Maple Walnut and Sharp Cheddar Apple Pie

Ingredients

The pie crust

  • 1 paleo pie crust shell paleo pie crust

The filling

  • 6 medium red apples (gala, red delicious)
  • 1 cup sharp cheddar cheese
  • 2 tbsp tapioca starch
  • 1 tsp ground cinnamon
  • ¼ tsp freshly grated nutmeg
  • ¼ tsp Himalayan salt
  • ¼ tsp vanilla powder
  • 1 cup pure maple syrup

The crumble

  • cup walnuts, chopped
  • ¼ cup pure maple sugar flakes
  • 2 tbsp ghee
  • a pinch ground cinnamon
  • a pinch salt

Instructions

  1. Preheat the oven to 375°F and prepare the oven rack.
  2. Grease a 9" deep dish pie plate with ghee and line it with the pie crust. Refrigerate while preparing the filling.
  3. Make the crumble by mixing chopped walnuts, maple sugar flakes, ghee, and spices with your fingers until well combined.
  4. In a large bowl, mix tapioca starch, ground cinnamon, nutmeg, salt, and vanilla powder. Add sliced apples, cubed cheese, and about 1/3 of the crumble, then toss to coat.
  5. Transfer the apple mixture to the pie crust and pour maple syrup over it. Top with the remaining crumble.
  6. Bake the pie on the bottom rack for about 30 minutes until golden.
  7. Turn off the oven, leave the door ajar, and let the pie sit for another 10 minutes.
  8. Remove the pie from the oven and cool for at least an hour before serving.
