Chestnuts with Brussel Sprouts

olive oil or grapeseed oil

brussel sprouts

celtic sea salt
Instructions
- Score each chestnut with a paring knife.
- Arrange chestnuts in a single layer in a 9-inch skillet and toast over medium flame for 5 to 10 minutes until the shell begins to curl away from the nut.
- Remove from heat, partially cool, then peel and discard the shells.
- In a 9-inch skillet, warm the oil over medium heat and add the brussel sprouts and garlic.
- Sauté the sprouts for 5 to 10 minutes, covered, stirring occasionally until lightly browned.
- Add the chestnuts to the skillet and cook covered for an additional 10 minutes, stirring occasionally until the sprouts are very brown.
- Stir in the salt and sauté for an additional 2-3 minutes.
- Serve.
