Chestnuts with Brussel Sprouts

Ingredients

  • 1 pound fresh chestnuts
  • ¼ cup olive oil or grapeseed oil
  • 3 cloves garlic, minced
  • 2 pounds brussel sprouts
  • ½ teaspoon celtic sea salt

Instructions

  1. Score each chestnut with a paring knife.
  2. Arrange chestnuts in a single layer in a 9-inch skillet and toast over medium flame for 5 to 10 minutes until the shell begins to curl away from the nut.
  3. Remove from heat, partially cool, then peel and discard the shells.
  4. In a 9-inch skillet, warm the oil over medium heat and add the brussel sprouts and garlic.
  5. Sauté the sprouts for 5 to 10 minutes, covered, stirring occasionally until lightly browned.
  6. Add the chestnuts to the skillet and cook covered for an additional 10 minutes, stirring occasionally until the sprouts are very brown.
  7. Stir in the salt and sauté for an additional 2-3 minutes.
  8. Serve.
