Maple Brussels Sprouts

Ingredients

The vegetables and fruit

  • 1 pound Brussels sprouts
  • 1 medium red onion
  • 1 large apple

The seasonings and oil

  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon fine sea salt
  • ¾ teaspoon ground black pepper
  • 3-4 sprigs thyme

The nuts

  • 1 handful pecans

Instructions

  1. Preheat the oven to 400°F and line a baking sheet.
  2. Cut the Brussels sprouts in half and place them on the baking sheet with the apple and onion.
  3. Mix olive oil, maple syrup, salt, and pepper in a bowl, then drizzle over the veggies.
  4. Toss everything until well coated.
  5. Turn the Brussels sprouts cut-side down.
  6. Add thyme sprigs on top of the veggies.
  7. Roast in the oven for 35-40 minutes, shaking the pan occasionally.
  8. Once done, top with pecans and serve hot.
