Maple Brussels Sprouts

Instructions
- Preheat the oven to 400°F and line a baking sheet.
- Cut the Brussels sprouts in half and place them on the baking sheet with the apple and onion.
- Mix olive oil, maple syrup, salt, and pepper in a bowl, then drizzle over the veggies.
- Toss everything until well coated.
- Turn the Brussels sprouts cut-side down.
- Add thyme sprigs on top of the veggies.
- Roast in the oven for 35-40 minutes, shaking the pan occasionally.
- Once done, top with pecans and serve hot.
