Ingredients

The vegetables and fruit

  • 1 pound Brussels sprouts
  • 1 medium sweet onion
  • 1 large apple

The seasonings and oil

  • 1 tablespoon olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the Brussels sprouts in half and toss them with the sliced onion and cubed apple in a bowl.
  3. Mix the olive oil, maple syrup, salt, and pepper, then drizzle over the vegetable mixture and stir until coated.
  4. Spread the mixture on a greased baking sheet.
  5. Bake for 25-30 minutes, stirring a few times, until the apples are tender, onions are soft, and Brussels sprouts begin to caramelize.
  6. Serve immediately.
