Ingredients

The chicken

  • 2 pieces boneless, skinless chicken breasts (6 oz each)

The filling and coating

  • 2 oz 1/3 less fat cream cheese
  • 2 teaspoons all-purpose flour
  • 1 piece egg white, beaten
  • 2 teaspoons sesame seeds
  • 2 teaspoons poppy seeds
  • 2 teaspoons dried chopped/minced onion
  • 1 teaspoon coarsely ground sea salt
  • 1 teaspoon minced garlic
  • 1 teaspoon canola oil

Instructions

  1. 1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. 2. Slice the chicken breasts almost all the way through from the side to create a pocket.
  3. 3. Stuff each chicken breast with 1 oz of cream cheese and fold it back over.
  4. 4. Place the stuffed breasts in a Ziploc bag with flour and coat them lightly.
  5. 5. Dip the coated chicken in beaten egg white, then coat with the mixture of sesame seeds, poppy seeds, onion, salt, and garlic.
  6. 6. Heat oil in a skillet over medium-high heat and sear the chicken breasts for about 1 minute on each side until golden.
  7. 7. Transfer the chicken to the baking sheet and bake for 30-35 minutes until fully cooked.
