Cream Cheese and Herb Stuffed Chicken

Ingredients

The stuffing

  • 4 oz 1/3 less fat cream cheese, softened
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced fresh chives
  • 2 cloves garlic, minced

The chicken

  • 4 6 oz boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste salt and black pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cream cheese, parsley, dill, chives, and garlic, and mash until mixed.
  3. Slice each chicken breast almost all the way through to create a pocket, then open them up.
  4. Spread the cream cheese mixture on one side of each chicken breast, fold the other side over, and season with salt and pepper.
  5. Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken breasts for 1-2 minutes on each side until golden.
  6. Transfer the chicken to the prepared baking sheet and bake for 30 minutes until fully cooked.
