Cream Cheese and Herb Stuffed Chicken

The chicken

boneless, skinless chicken breasts

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cream cheese, parsley, dill, chives, and garlic, and mash until mixed.
- Slice each chicken breast almost all the way through to create a pocket, then open them up.
- Spread the cream cheese mixture on one side of each chicken breast, fold the other side over, and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken breasts for 1-2 minutes on each side until golden.
- Transfer the chicken to the prepared baking sheet and bake for 30 minutes until fully cooked.
