Ingredients

The Potato Salad

  • 2 lbs potatoes, cubed
  • ½ medium red onion
  • 2 tablespoons dijon mustard
  • 3 tablespoons organic relish
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ¼ to ½ cup vegan mayonnaise

The Coconut Bacon

  • 2 cups unsweetened coconut flakes
  • 2 tablespoons liquid aminos
  • 1 tablespoon liquid smoke
  • 1 tablespoon maple syrup
  • ¼ teaspoon smoked paprika

Instructions

  1. Cook the potatoes in salted water until tender, then drain and cool.
  2. Once cooled, mix the potatoes with the remaining salad ingredients.
  3. For the coconut bacon, preheat the oven and prepare a baking sheet.
  4. Combine coconut flakes with liquid aminos, liquid smoke, maple syrup, and paprika.
  5. Spread the mixture on the baking sheet and bake until crispy.
  6. Add the coconut bacon to the potato salad before serving.
