Ingredients

  • 1 cup non-dairy milk (such as soy, almond, oat, or coconut milk)
  • 1 tablespoon vegan butter
  • 1 teaspoon fine sea salt
  • ¼ teaspoon ground black pepper
  • ¼ cup non-dairy milk, divided
  • 4 pieces sun dried tomatoes, chopped
  • to taste parsley, for garnish

Instructions

  1. Heat olive oil in a pan over medium-high heat and sauté minced garlic for about 30 seconds.
  2. Add vegetable broth, penne pasta, and 1 cup of non-dairy milk to the pan, bringing it to a boil before reducing to a simmer.
  3. Incorporate the remaining ingredients (vegan butter, sea salt, and ground black pepper), reserving ¼ cup of non-dairy milk and sun dried tomatoes.
  4. Cook the pasta for about 18-20 minutes, stirring occasionally until done.
  5. If the sauce is too thick, stir in the reserved ¼ cup of non-dairy milk and then add the sun dried tomatoes.
  6. Garnish with parsley, serve, and enjoy.
