Instructions
- Heat olive oil in a pan over medium-high heat and sauté minced garlic for about 30 seconds.
- Add vegetable broth, penne pasta, and 1 cup of non-dairy milk to the pan, bringing it to a boil before reducing to a simmer.
- Incorporate the remaining ingredients (vegan butter, sea salt, and ground black pepper), reserving ¼ cup of non-dairy milk and sun dried tomatoes.
- Cook the pasta for about 18-20 minutes, stirring occasionally until done.
- If the sauce is too thick, stir in the reserved ¼ cup of non-dairy milk and then add the sun dried tomatoes.
- Garnish with parsley, serve, and enjoy.
