Simple Vegan Cookies

packed dates (soaked for 10 minutes in warm water and then drained)

all natural, salted almond butter or peanut butter

almond meal (ground from raw almonds)

gluten-free rolled oats
Optional add-ins

dairy-free chocolate chips

dried fruit, flaxseed, seeds, nuts
Instructions
- 1. Pulse the dates in a food processor until small bits remain.
- 2. Add the banana and almond butter, mixing until combined.
- 3. Add the almond meal and rolled oats, pulsing until a loose dough forms.
- 4. If the dough is too wet, add more almond meal or oats until it can be formed into cookies.
- 5. Optionally, mix in your choice of add-ins like chocolate chips or nuts.
- 6. Chill the dough for 10 minutes and preheat the oven to 350°F (176°C).
- 7. Scoop out 1 Tbsp of dough, form into discs, and place on a parchment-lined baking sheet.
- 8. Bake for 15-18 minutes until golden brown and firm to the touch.
- 9. Let cool on the pan for a few minutes before transferring to a cooling rack.
