Ingredients

The cookies

  • 1 cup packed dates (soaked for 10 minutes in warm water and then drained)
  • 1 medium ripe banana
  • 2 Tbsp all natural, salted almond butter or peanut butter
  • ¾ cup almond meal (ground from raw almonds)
  • ¾ cup gluten-free rolled oats

Optional add-ins

  • ¼ cup dairy-free chocolate chips
  • to taste dried fruit, flaxseed, seeds, nuts

Instructions

  1. 1. Pulse the dates in a food processor until small bits remain.
  2. 2. Add the banana and almond butter, mixing until combined.
  3. 3. Add the almond meal and rolled oats, pulsing until a loose dough forms.
  4. 4. If the dough is too wet, add more almond meal or oats until it can be formed into cookies.
  5. 5. Optionally, mix in your choice of add-ins like chocolate chips or nuts.
  6. 6. Chill the dough for 10 minutes and preheat the oven to 350°F (176°C).
  7. 7. Scoop out 1 Tbsp of dough, form into discs, and place on a parchment-lined baking sheet.
  8. 8. Bake for 15-18 minutes until golden brown and firm to the touch.
  9. 9. Let cool on the pan for a few minutes before transferring to a cooling rack.
