Ingredients

  • cup pitted dates, lightly packed
  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • ½ teaspoon apple cider vinegar
  • ¼ cup coconut oil, melted and cooled
  • ¼ cup roasted, smooth almond butter or sunflower seed butter
  • teaspoons vanilla extract
  • 1 cup almond flour or sunflower seed flour
  • ¼ cup coconut flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 scant cup vegan chocolate chunks/chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Soak the dates in boiling water for 5 minutes to soften them.
  3. Mix the ground flaxseed, water, and apple cider vinegar in a small bowl and let it thicken for 5 minutes.
  4. Drain the dates and blend them in a food processor with the flaxseed mixture, coconut oil, almond butter, and vanilla until smooth.
  5. Add the almond flour, coconut flour, salt, and baking soda to the food processor and blend until a sticky dough forms.
  6. Transfer the dough to a bowl and fold in the chocolate chips.
  7. Scoop heaped tablespoons of dough onto the baking sheet, lightly oil your hands, and flatten each portion.
  8. Bake for about 11 minutes until golden on the undersides and cracked on top.
  9. Cool the cookies on the baking sheet and enjoy them fresh.
