Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Soak the dates in boiling water for 5 minutes to soften them.
- Mix the ground flaxseed, water, and apple cider vinegar in a small bowl and let it thicken for 5 minutes.
- Drain the dates and blend them in a food processor with the flaxseed mixture, coconut oil, almond butter, and vanilla until smooth.
- Add the almond flour, coconut flour, salt, and baking soda to the food processor and blend until a sticky dough forms.
- Transfer the dough to a bowl and fold in the chocolate chips.
- Scoop heaped tablespoons of dough onto the baking sheet, lightly oil your hands, and flatten each portion.
- Bake for about 11 minutes until golden on the undersides and cracked on top.
- Cool the cookies on the baking sheet and enjoy them fresh.
