Ingredients

  • cups almond flour
  • 1 cup gluten free rolled oats
  • 1 cup creamy peanut butter
  • cup coconut oil, melted
  • ¼ cup coconut sugar
  • 2 units eggs
  • 1 cup dairy free chocolate chips
  • 1 cup m&m’s (or similar chocolate pieces)
  • 1 tsp vanilla extract
  • tsp baking soda
  • ½ tsp sea salt

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix the dry ingredients together and set aside.
  3. In another bowl, whisk the eggs, then add the peanut butter, melted coconut oil, and vanilla extract, whisking until smooth.
  4. Combine the wet ingredients with the dry ingredients to form a thick batter.
  5. Fold in the chocolate chips and ¾ cup of the m&m’s, reserving some for topping.
  6. Scoop out 14-16 cookies and flatten them slightly, as they won't spread during baking.
  7. Press the reserved m&m’s on top of each cookie.
  8. Bake for 14-15 minutes, then let cool before enjoying.
  9. Store in an airtight container in the fridge for up to one week.
