Ingredients

The base

  • ½ cup unsalted butter, softened
  • ¾ cup dark brown sugar, firmly packed
  • ¼ cup granulated sugar
  • ½ cup creamy peanut butter
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup white whole wheat flour or whole wheat pastry flour
  • 1 cup old fashioned rolled oats

The mix-ins

  • ¾ cup dark chocolate M&Ms
  • ½ cup semi-sweet or dark chocolate chips
  • ½ cup peanut butter chips

Instructions

  1. Cream the butter, brown sugar, and granulated sugar until fluffy.
  2. Beat in the peanut butter until fluffy, then add the egg and vanilla until combined.
  3. Sprinkle the baking soda and salt over the mixture, then gradually add the flour while mixing on low.
  4. Slowly beat in the oats and then stir in the M&Ms, chocolate chips, and peanut butter chips by hand.
  5. Chill the dough for at least 30 minutes if time allows.
  6. Preheat the oven to 350°F and line two cookie sheets with parchment paper.
  7. Drop rounded tablespoons of dough onto the sheets and bake for 10 minutes until lightly golden brown.
  8. Let the cookies rest on the sheet for 5 minutes before transferring to a wire rack to cool.
