Instructions
- Preheat the oven to 350°F and line two large baking sheets with parchment paper.
- In a large mixing bowl, combine peanut butter, sugar, and melted oil or butter, mixing until well combined.
- Add eggs, baking soda, and vanilla to the mixture and mix well.
- Stir in the oats and chocolate chips until evenly incorporated.
- Scoop the dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 10 to 12 minutes until the edges are golden, then let cool for 10 minutes before transferring to a cooling rack.
