Ingredients

The base

  • 2.5 cups quick-cooking oats
  • ¼ cup melted unsalted butter
  • ½ cup light brown sugar, packed
  • 2 tablespoons maple syrup
  • 1 large egg
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • pinch salt
  • 1 teaspoon baking soda

The mix-ins

  • ½ cup semi-sweet chocolate chips
  • ½ cup M&M’s

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with nonstick spray.
  2. Mix melted butter and brown sugar until smooth, then add maple syrup, egg, peanut butter, and vanilla, mixing well.
  3. Stir in salt, oats, and baking soda until combined, then fold in chocolate chips and M&M’s.
  4. Refrigerate the dough for 20 minutes to firm up.
  5. Scoop 2 tablespoons of dough, roll into a ball, and slightly flatten on the baking sheet.
  6. Repeat until the baking sheet is filled with 6 cookies.
  7. Bake for 11-14 minutes until golden brown around the edges.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
