Ingredients

The base

  • 3 large eggs
  • 1 ¼ cups packed light brown sugar
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 1 ½ cups creamy peanut butter
  • ½ cup salted butter, softened

The mix-ins

  • 4 ½ cups quick cooking oats
  • 1 cup M&Ms
  • 1 cup milk chocolate, semisweet, or bittersweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare cookie sheets.
  2. In a large bowl, mix eggs, brown sugar, and granulated sugar until well combined.
  3. Add salt, baking soda, vanilla, peanut butter, and softened butter, mixing until creamy.
  4. Stir in oats, M&Ms, and chocolate chips until combined; the dough will be sticky.
  5. Scoop dough into heaping tablespoon-sized balls and place on cookie sheets, spacing them apart.
  6. Bake for 8-10 minutes until set and lightly golden around the edges.
  7. Let cookies cool on the sheet for 1-2 minutes before transferring to a cooling rack.
