Ingredients

The cookie dough

  • cups rolled oats
  • ½ cup brown sugar, packed
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup peanut butter
  • 2 Tbsp melted butter
  • 2 whole eggs
  • 1 tsp pure vanilla extract

The mix-ins

  • ⅓–½ cup candy-coated chocolate pieces
  • ⅓–½ cup chocolate chips

Instructions

  1. Preheat the oven to 350ºF and line two baking sheets with parchment paper.
  2. In a medium bowl, mix all ingredients except for the candy-coated pieces and chocolate chips until combined.
  3. Fold in the candy-coated chocolate pieces and chocolate chips.
  4. Use a small cookie scoop to place heaping amounts of dough onto the prepared baking sheets.
  5. Flatten the dough slightly with oiled hands to about ¾-inch thick.
  6. Bake for 11-13 minutes until lightly golden brown.
  7. Let cookies cool on the baking sheet for 15 minutes before transferring to a wire rack.
  8. Store in an airtight container for up to one week or freeze for later.
