Ingredients

The cookie base

  • 2 cups almond flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • ¼ tsp salt
  • cup natural peanut butter
  • cup coconut oil
  • 2 large eggs
  • cup coconut sugar
  • 1 tsp vanilla extract

The mix-ins

  • 1 cup M&Ms
  • ½ cup mini chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. In a large bowl, mix together the almond flour, rolled oats, baking soda, and salt.
  3. 3. In a small bowl, whisk the eggs, then add the coconut oil and coconut sugar.
  4. 4. Mix in the peanut butter and vanilla extract to the wet ingredients.
  5. 5. Combine the wet ingredients with the dry ingredients and stir until fully mixed.
  6. 6. Fold in the M&Ms and mini chocolate chips.
  7. 7. Roll the cookie dough into balls and flatten them slightly on the baking sheet.
  8. 8. Bake for 14-16 minutes until golden.
  9. 9. Allow to cool slightly before enjoying.
