Instructions
- 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
- 2. In a large bowl, mix together the almond flour, rolled oats, baking soda, and salt.
- 3. In a small bowl, whisk the eggs, then add the coconut oil and coconut sugar.
- 4. Mix in the peanut butter and vanilla extract to the wet ingredients.
- 5. Combine the wet ingredients with the dry ingredients and stir until fully mixed.
- 6. Fold in the M&Ms and mini chocolate chips.
- 7. Roll the cookie dough into balls and flatten them slightly on the baking sheet.
- 8. Bake for 14-16 minutes until golden.
- 9. Allow to cool slightly before enjoying.
