Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a stand mixer, beat together the peanut butter, brown sugar, and eggs until fluffy, then add the vanilla extract.
- In a separate bowl, mix the oats, baking soda, and salt, then gradually add to the wet ingredients while mixing on low speed.
- Fold in the M&Ms, chocolate chips, and any optional mix-ins.
- Scoop the dough onto the baking sheet, rolling into balls and pressing down slightly with a fork.
- Bake for 8-9 minutes until lightly browned and set, then let cool before serving.
