Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- Blend 1½ cups of rolled oats to create oat flour.
- Cream together the butter, light brown sugar, and white sugar until smooth.
- Mix in the peanut butter, eggs, and vanilla extract until combined.
- Add the rolled oats, oat flour, and baking soda, mixing until just combined.
- Fold in the chocolate chips, M&Ms, butterscotch chips, and crushed pretzels.
- Scoop out dough for either 12 large cookies or 24 smaller cookies, spacing them on the baking sheet.
- Bake for 11-13 minutes for large cookies or 9-11 minutes for smaller cookies until golden.
- Allow cookies to cool for at least 10 minutes before serving.
