Ingredients

The chili

  • 1 pound lean ground beef or turkey (optional)
  • ½ cup chopped yellow or white onion
  • 2 cloves garlic, finely minced
  • 1 28-ounce can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 ½ cups brown lentils, rinsed and drained
  • 1 medium green bell pepper, diced
  • 1 ½ tablespoons chili powder
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Toppings

  • to taste chili toppings (your choice)

Instructions

  1. 1. In the Instant Pot, use the sauté function to brown the ground meat with onions and garlic, then drain excess grease.
  2. 2. Add crushed tomatoes, chicken broth, lentils, bell pepper, chili powder, brown sugar, oregano, cumin, salt, and pepper.
  3. 3. Secure the lid and cook on high pressure for 10 minutes.
  4. 4. Allow the pressure to naturally release for 10 minutes, then quick release any remaining pressure.
  5. 5. Stir the chili and adjust consistency with additional broth if needed.
  6. 6. Season to taste with salt and pepper, and serve with desired toppings.
