Any-Weather Celery and Spinach Soup

For garnish
Instructions
- 1. In a large saucepan, soften the onion and garlic in the butter.
- 2. Add the broth, celery, and potato, then bring to a boil.
- 3. Cover and simmer gently for about 20 minutes or until the vegetables are tender.
- 4. In a blender, puree the soup and spinach until smooth.
- 5. Add salt and pepper to taste, and garnish with parmesan.
