Gochujang Steak Wraps

Ingredients

The steak

  • 2 lb boneless New York strip steaks
  • 2 Tbsp Diamond Crystal kosher salt
  • 1 ½ tsp Morton kosher salt
  • 2 Tbsp vegetable oil
  • 3 Tbsp sugar
  • 2 Tbsp sesame seeds
  • 6 cloves garlic, finely chopped
  • ¼ cup gochujang (Korean hot pepper paste)
  • 2 Tbsp soy sauce, preferably low-sodium
  • 2 Tbsp toasted sesame oil
  • 1 Tbsp apple cider vinegar
  • 6 pieces scallions, green parts only, thinly sliced

For serving

  • to taste flaky sea salt
  • to taste cooked rice
  • to taste tender lettuce leaves

Instructions

  1. Rub the steaks with salt, vegetable oil, and sugar; let sit for 15-30 minutes.
  2. Toast sesame seeds in a skillet until dark brown, then mix with garlic, gochujang, soy sauce, sesame oil, apple cider vinegar, and remaining sugar.
  3. Cook the steaks in a hot skillet, turning until browned and medium-rare, then let rest.
  4. Slice the steaks against the grain, serve with gochujang sauce, scallions, flaky sea salt, rice, and lettuce for wraps.
