Instructions
- Dry off the pork tenderloins with paper towels and season liberally with salt, pepper, and your favorite dry rub.
- Add a pat of ghee or butter to each tenderloin and vacuum seal them.
- Place the sealed packet in the SousVide Supreme set to 135-140°F for at least 2 hours.
- If not serving immediately, cool in an ice bath for an hour and store in the fridge or freezer.
- After 2 hours, remove the pork from the packet and dry it off.
- Sear the pork in a hot pan with ghee or use a torch to finish.
