Ingredients

The pork

  • 2 pound pork tenderloin

The seasoning

  • tablespoon Tabil seasoning
  • tablespoon Kosher salt
  • to taste freshly ground black pepper

The fat

  • 2 tablespoon ghee or butter

Instructions

  1. Dry off the pork tenderloins with paper towels and season liberally with salt, pepper, and your favorite dry rub.
  2. Add a pat of ghee or butter to each tenderloin and vacuum seal them.
  3. Place the sealed packet in the SousVide Supreme set to 135-140°F for at least 2 hours.
  4. If not serving immediately, cool in an ice bath for an hour and store in the fridge or freezer.
  5. After 2 hours, remove the pork from the packet and dry it off.
  6. Sear the pork in a hot pan with ghee or use a torch to finish.
