Ingredients

The pasta and cheese sauce

  • 2 ½ cups Vegan White Cheese Sauce
  • 1 ½ cups water
  • 1 teaspoon apple cider vinegar
  • ½ - 1 teaspoon mustard seed powder
  • ¾ teaspoon chickpea miso
  • 1 teaspoon sea salt
  • 12 ounces pasta

The crispy topping

  • ½ cup almond flour or hemp seeds
  • ½ cup breadcrumbs
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • 2-4 tablespoons vegan Parmesan (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the cheese sauce by blending it with water, apple cider vinegar, mustard seed powder, chickpea miso, and salt to taste.
  3. Combine the crispy topping ingredients in a food processor or mix them in a bowl if using almond flour.
  4. Cook the pasta for half the time indicated on the package, then drain and rinse.
  5. Mix the partially cooked pasta with the cheese sauce, starting with 2 cups of sauce.
  6. Pour the mixture into a baking dish and sprinkle the crispy topping evenly over it.
  7. Bake for 15-20 minutes, checking at 15 minutes to prevent overcooking.
  8. Serve hot.
