Almond Chicken

Ingredients

The stir fry

  • 2 tbsp Avocado oil
  • 1 lb Boneless skinless chicken breast (cut into bite-size pieces)
  • 1 tsp Sea salt
  • ½ tsp Black pepper
  • 1 medium Onion (diced)
  • 1 medium Red bell pepper (diced)
  • ½ cup Snow peas
  • cup Almonds (sliced)
  • 2 medium Green onions (chopped, plus more for garnish if desired)

The sauce

  • ½ cup Chicken broth, reduced sodium
  • 2 tbsp Coconut aminos
  • 2 cloves Garlic (minced)
  • 1 tsp Fresh ginger (minced)
  • ½ tsp Black pepper

Instructions

  1. Heat avocado oil in a large skillet over medium-high heat until shimmering.
  2. Add onion and sauté until translucent, then add bell pepper and cook for a couple more minutes.
  3. Add chicken pieces, season with salt and pepper, and cook until the chicken is cooked through.
  4. In a small bowl, whisk together the sauce ingredients: chicken broth, coconut aminos, garlic, ginger, and black pepper.
  5. Add the sauce to the pan and simmer until it has reduced and thickened.
  6. Increase heat, add snow peas, almonds, and chopped green onions, and stir fry for a few more minutes.
  7. Serve over rice or cauliflower rice, garnished with additional green onions if desired.
