Instructions
- Heat avocado oil in a large skillet over medium-high heat until shimmering.
- Add onion and sauté until translucent, then add bell pepper and cook for a couple more minutes.
- Add chicken pieces, season with salt and pepper, and cook until the chicken is cooked through.
- In a small bowl, whisk together the sauce ingredients: chicken broth, coconut aminos, garlic, ginger, and black pepper.
- Add the sauce to the pan and simmer until it has reduced and thickened.
- Increase heat, add snow peas, almonds, and chopped green onions, and stir fry for a few more minutes.
- Serve over rice or cauliflower rice, garnished with additional green onions if desired.
