Broccoli Almond Chicken

Ingredients

The main dish

  • 2-3 tbsp healthy cooking fat or oil
  • 1.7 lb skinless, boneless chicken breasts, cut into 1-1/2" chunks
  • ½ tsp salt
  • 1 medium onion, halved and sliced lengthwise
  • 4 cups raw broccoli florets
  • ½ cup raw almonds

The sauce

  • ½ cup chicken broth
  • cup all natural almond butter
  • ¼ cup unseasoned rice vinegar
  • ¼ cup coconut aminos
  • 2 tbsp sambal oelek
  • 1 tsp fish sauce
  • 4 large cloves garlic, minced

Instructions

  1. Combine all sauce ingredients in a bowl and whisk until well combined, then set aside.
  2. Heat cooking fat or oil in a large wok or skillet over high heat.
  3. Add chicken pieces and cook until opaque and fully cooked, about 8 minutes.
  4. Drain excess liquid from the pan if necessary, then add onions and almonds; sauté for about 2 minutes until onions are softened.
  5. Add broccoli and sauté for about 30 seconds.
  6. Stir in the sauce and continue cooking for about 1 minute until broccoli is cooked to your liking and sauce thickens.
  7. Remove from heat and serve immediately, optionally with white rice and chopped green onions.
