Ingredients

Almond Flour Tortillas

  • cup almond flour
  • 5 Tablespoons NOW psyllium husk powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup boiling water

Coconut Flour Tortillas

  • ¾ cup coconut flour
  • 5 Tablespoons NOW psyllium husk powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1 cup boiling water

Instructions

  1. Boil water and keep it hot.
  2. In a medium bowl, mix the psyllium powder, almond flour (or coconut flour), and salt thoroughly.
  3. In a separate bowl, blend the eggs with a fork.
  4. Pour the eggs into the dry mixture and blend until just mixed.
  5. Add the boiling water and mix until a dough forms; let it sit for a few minutes.
  6. Heat a skillet or griddle on medium-high heat.
  7. Divide the dough into pieces and roll each into a ball.
  8. Flatten each ball between oiled parchment paper using a rolling pin or tortilla press.
  9. Cook each tortilla on the hot pan until browned on both sides.
