Ingredients

The salad

  • 3 cups cooked diced chicken breasts
  • 1 Tbsp fresh lemon juice
  • ½ cup diced celery
  • cup chopped green onions
  • 2 Tbsp finely chopped fresh parsley
  • ½ cup mayonnaise
  • 1 tsp Dijon mustard
  • ¾ tsp lemon zest
  • to taste salt
  • to taste black pepper

For serving

  • as needed bread slices or lettuce leaves

Instructions

  1. Combine the diced chicken and lemon juice in a large mixing bowl.
  2. Add the diced celery, chopped green onions, parsley, mayonnaise, Dijon mustard, lemon zest, salt, and pepper.
  3. Toss the mixture until well combined.
  4. Serve immediately in bread or lettuce leaves, or chill in the refrigerator for up to 1 day.
