Ingredients

The oats

  • ½ cup old-fashioned oats

The mixture

  • ¾ cup plant-based milk, plain, unsweetened
  • ½–1 tablespoon pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • ¼ cup canned pumpkin or homemade pumpkin puree
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons flax seeds, ground

Instructions

  1. Combine oats, plant-based milk, maple syrup, pumpkin pie spice, pumpkin, pumpkin seeds, and flax seeds in a mason jar or container.
  2. Cover and shake well or stir with a spoon.
  3. Refrigerate overnight.
  4. Enjoy the oats cold or warm the next morning, adding more plant-based milk if needed.
