Ingredients

The base

  • 1 cup old-fashioned rolled oats
  • 1 cup milk of choice
  • cup pumpkin puree
  • 2 tablespoons chopped pecans
  • 1 ½ tablespoons pure maple syrup
  • 2 teaspoons chia seeds or flax meal
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon pure vanilla extract
  • 1 pinch salt

Optional toppings

  • to taste whipped topping
  • to taste chopped pecans
  • to taste pumpkin pie spice
  • to taste maple syrup
  • to taste cinnamon stick

Instructions

  1. Whisk together all ingredients except for the toppings in a bowl.
  2. Divide the mixture among three jars or containers.
  3. Seal the jars and refrigerate for at least 4 hours or overnight.
  4. Add any optional toppings just before serving.
