Aji Verde Sauce

Ingredients

  • 1 cup cilantro leaves and tender stems
  • ¼ cup raw cashews
  • ¼ cup water
  • 2 stalks green onion
  • 2 Tbsp lime juice
  • 1-2 Tbsp aji amarillo paste
  • 1 small clove garlic
  • 1 tsp maple syrup
  • ¼-½ tsp sea salt

Instructions

  1. Blend all ingredients in a small blender until smooth and creamy, scraping down the sides as needed.
  2. Taste and adjust seasoning, adding more lime juice, aji amarillo, sweetener, or salt as desired.
  3. Add more water if a thinner consistency is preferred.
  4. Enjoy immediately or chill for 1 hour to thicken.
  5. Store leftovers in a sealed container in the refrigerator for up to 3-4 days.
