Instant Pot Rice Pudding

Ingredients

  • 3 cups almond milk
  • cup rice (basmati or white, rinsed)
  • ½ cup maple syrup
  • ½ teaspoon salt
  • 2 tablespoons butter
  • ½ cup raisins
  • ½ teaspoon cinnamon
  • 1 ½ teaspoons vanilla extract
  • zest of ½ lemon

Instructions

  1. Combine almond milk, rice, maple syrup, cinnamon, butter, and salt in the Instant Pot.
  2. Close and lock the lid.
  3. Select high pressure and set the timer for 8 minutes, allowing 10-15 minutes for pressure to build.
  4. After cooking, allow a natural release for 10 minutes, then quick release the remaining pressure.
  5. Unlock and remove the lid, then stir in vanilla extract, lemon zest, and raisins.
  6. Serve hot or cold.
