Ingredients

  • 1 cup white rice (Arborio, Jasmine, or Basmatti)
  • cups water
  • 1 can (13.5 oz.) coconut milk
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • cup maple syrup

Instructions

  1. Combine rice and water in the Instant Pot and secure the lid.
  2. Set the steam release valve to 'Sealing' and cook at high pressure for 4 minutes.
  3. Allow the pressure to naturally release for 10 minutes after cooking.
  4. Release any remaining pressure and open the lid.
  5. Stir in coconut milk, cinnamon, vanilla, and maple syrup.
  6. Remove the inner pot to cool the pudding faster.
  7. Serve with additional cinnamon, fruit, or maple syrup if desired.
