Ingredients

The base

  • 1 ½ cups Arborio Rice
  • 2 ¼ cups Water
  • ¼ teaspoon Salt

The mixture

  • 3 cups Whole Milk (or half and half)
  • ¾ cup Sugar
  • 3 units Eggs
  • 1 teaspoon Vanilla
  • ½ teaspoon Cinnamon (optional)
  • ¾ cup Raisins (optional)

Instructions

  1. Add rice, water, and salt to the Instant Pot, seal the lid, and pressure cook on high for 3 minutes.
  2. Let the pot sit undisturbed for 10 minutes for natural release.
  3. Whisk together the milk, eggs, and vanilla in a separate bowl.
  4. Release any remaining pressure and open the lid.
  5. Stir in the milk mixture, sugar, and cinnamon if using.
  6. Turn on the sauté setting and bring to a simmer while stirring constantly.
  7. Turn off the pot and carefully remove the inner pot to a heat-safe surface.
  8. Stir in the raisins and let the pudding thicken as it cools.
  9. Serve warm or cold, optionally with cream or whipped cream.
