Instructions
- Add rice, water, and salt to the Instant Pot, seal the lid, and pressure cook on high for 3 minutes.
- Let the pot sit undisturbed for 10 minutes for natural release.
- Whisk together the milk, eggs, and vanilla in a separate bowl.
- Release any remaining pressure and open the lid.
- Stir in the milk mixture, sugar, and cinnamon if using.
- Turn on the sauté setting and bring to a simmer while stirring constantly.
- Turn off the pot and carefully remove the inner pot to a heat-safe surface.
- Stir in the raisins and let the pudding thicken as it cools.
- Serve warm or cold, optionally with cream or whipped cream.
