Quinoa Primavera

Ingredients

The base

  • 2 cups cooked quinoa
  • 1 tablespoon olive oil
  • 1 cup vegetable or chicken broth

The sauce

  • ½ cup milk
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper

The vegetables

  • 1 package frozen primavera vegetable blend
  • 2 cloves minced garlic (optional)

The toppings

  • 2 ounces Parmesan cheese (grated, optional)
  • 3 tablespoons chopped parsley

Instructions

  1. Heat olive oil in a large sauté pan over medium heat.
  2. Add minced garlic and cook for 30 seconds.
  3. Add frozen vegetables and cook for 5 minutes.
  4. In a small bowl, whisk together milk and cornstarch, then add to the vegetable mixture and cook for 2 minutes.
  5. Add broth, salt, and pepper, and cook for an additional 3 minutes.
  6. Stir in cooked quinoa and heat through, adding more broth if necessary.
  7. Serve warm, topped with Parmesan cheese and chopped parsley.
