Instructions
- Heat olive oil in a large sauté pan over medium heat.
- Add minced garlic and cook for 30 seconds.
- Add frozen vegetables and cook for 5 minutes.
- In a small bowl, whisk together milk and cornstarch, then add to the vegetable mixture and cook for 2 minutes.
- Add broth, salt, and pepper, and cook for an additional 3 minutes.
- Stir in cooked quinoa and heat through, adding more broth if necessary.
- Serve warm, topped with Parmesan cheese and chopped parsley.
