Ingredients

The chicken

  • 6 small Chicken Breasts

The filling

  • 3 cups Baby Spinach, chopped
  • 4 oz. Goat Cheese, crumbled
  • 3 tbsp. Sundried Tomatoes, chopped
  • 1 clove garlic, minced

Optional toppings

  • to taste Bread Crumbs
  • to taste Fresh Parsley, chopped

Instructions

  1. Preheat the oven to 400 degrees.
  2. Sauté spinach, garlic, and sundried tomatoes in a skillet until spinach wilts, then stir in goat cheese.
  3. Pound chicken breasts to ½ inch thickness and season with salt and pepper.
  4. Place a heaping tablespoon of filling in the center of each chicken breast and fold the sides over the filling.
  5. Place the folded chicken in a baking dish with the folds facing up.
  6. Sprinkle bread crumbs on top if desired.
  7. Bake for 20-25 minutes, ensuring the internal temperature reaches 165 degrees.
  8. Garnish with parsley if desired and serve.
