Instructions
- Preheat the oven to 400 degrees.
- Sauté spinach, garlic, and sundried tomatoes in a skillet until spinach wilts, then stir in goat cheese.
- Pound chicken breasts to ½ inch thickness and season with salt and pepper.
- Place a heaping tablespoon of filling in the center of each chicken breast and fold the sides over the filling.
- Place the folded chicken in a baking dish with the folds facing up.
- Sprinkle bread crumbs on top if desired.
- Bake for 20-25 minutes, ensuring the internal temperature reaches 165 degrees.
- Garnish with parsley if desired and serve.
