Instructions
- Preheat the grill to medium-high (350-400 degrees).
- Grill the chicken sausage and fennel quarters until the sausage reaches an internal temperature of 170 degrees and the fennel begins to soften and char.
- Remove the sausage and fennel from the grill and let them cool.
- Slice the apple thinly and layer it on a bed of arugula.
- Slice the grilled fennel and sausage, and layer them on top of the salad.
- Drizzle with olive oil and red wine vinegar, then sprinkle with sea salt and fresh ground pepper.
