Grilled Fennel, Chicken Sausage and Apple Salad

Ingredients

The salad

  • 3 links chicken sausage
  • 1 large fennel bulb
  • 1 large crisp red apple
  • 2 cups arugula

The dressing

  • to taste olive oil
  • to taste red wine vinegar
  • to taste sea salt
  • to taste fresh ground pepper

Instructions

  1. Preheat the grill to medium-high (350-400 degrees).
  2. Grill the chicken sausage and fennel quarters until the sausage reaches an internal temperature of 170 degrees and the fennel begins to soften and char.
  3. Remove the sausage and fennel from the grill and let them cool.
  4. Slice the apple thinly and layer it on a bed of arugula.
  5. Slice the grilled fennel and sausage, and layer them on top of the salad.
  6. Drizzle with olive oil and red wine vinegar, then sprinkle with sea salt and fresh ground pepper.
