Lemongrass and Sriracha Grilled Shrimp

The shrimp

tiger prawn or jumbo prawn, peeled, deveined, tails intact

for brushing
The marinade

fish sauce

lemongrass, white part only, grated

powdered sugar

Sriracha

big clove
garlic, finely minced
The dipping sauce (optional)

chili garlic sauce

tablespoon
chopped cilantro leaves

calamansi, extract the juice (or 1 wedge lime)
Instructions
- Clean the shrimp under cold running water and pat them dry.
- Transfer the shrimp to a bowl and add all marinade ingredients, stirring to combine.
- Marinate the shrimp for 15 minutes.
- Thread three shrimp onto each skewer and brush with oil.
- Grill the shrimp on both sides until charred and cooked through.
- Serve immediately with the dipping sauce, if desired.
