Bang Bang Grilled Shrimp Skewers

Ingredients

The sauce

  • tbsp light mayonnaise
  • 2 tbsp scallions, chopped fine
  • tbsp Thai Sweet Chili Sauce
  • ½ tsp Sriracha

The shrimp

  • 40 large raw shrimp, shelled and deveined
  • to taste fresh cracked pepper
  • as needed spray oil

Instructions

  1. Combine the mayonnaise, scallions, sweet chili sauce, and Sriracha in a small bowl and set aside.
  2. Soak wooden skewers in water for at least 20 minutes or use metal skewers.
  3. Lightly season the shrimp with cracked pepper.
  4. Place 5 shrimp on each of the 8 skewers.
  5. Preheat a clean, lightly oiled grill to medium heat.
  6. Grill the shrimp on both sides for about 6 to 8 minutes until they are opaque and cooked through.
  7. Transfer the shrimp to a platter and brush the sauce over them; serve immediately.
