Ingredients

Cherry Pie Filling

  • 5 cups fresh Bing/sweet cherries, pitted and halved
  • cup granulated sugar
  • 1 tablespoon cornstarch
  • 1-2 drops almond extract

Cookie Dough

  • 1 cup salted butter, softened
  • 1 cup granulated sugar
  • 2 tablespoons milk or buttermilk
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 large egg yolk
  • 2 ¼ cups all-purpose flour

Glaze

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F and line a 9x13-inch baking pan with aluminum foil, greasing it lightly.
  2. In a medium bowl, combine cherries, sugar, cornstarch, and almond extract, and let it sit.
  3. In a separate bowl, cream together butter, sugar, milk, baking powder, baking soda, and salt until fluffy.
  4. Add the egg and egg yolk, mixing until well combined.
  5. Gradually add flour and mix until just combined.
  6. Press ⅔ of the dough into the bottom of the prepared pan.
  7. Pour the cherry filling over the crust and drop pieces of the remaining dough on top.
  8. Bake for 30-35 minutes until the filling is bubbling and the edges are golden.
  9. Let the bars cool completely.
  10. For the glaze, whisk together powdered sugar, lemon zest, and milk until smooth, then drizzle over the cooled bars.
  11. Serve at room temperature or slightly warm, optionally with ice cream.
