Ingredients

  • 1.5 cups white whole-wheat flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp kosher salt
  • 1.5 cups mashed bananas
  • 2-3 pieces egg whites
  • ¼ cup coconut oil
  • ¼ cup plain no fat yogurt
  • ½ cup turbinado sugar
  • 1 tsp vanilla extract
  • ½ cup chopped dark chocolate

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the flour, baking soda, cinnamon, and salt.
  3. In a medium bowl, mix the mashed bananas, egg whites, coconut oil, yogurt, turbinado sugar, and vanilla.
  4. Stir the wet ingredients into the dry ingredients until combined, then fold in the dark chocolate.
  5. Lightly spray a loaf pan with cooking spray and pour the batter into the pan.
  6. Bake in the oven for 50 minutes.
