Ingredients

The cake

  • ½ cup maple syrup
  • ¾ cup mashed overripe bananas
  • cup coconut oil
  • 1 tsp vanilla extract
  • 2 units eggs
  • cups all-purpose flour or cake flour
  • ¾ cup quick-cooking oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • pinch sea salt

Yogurt frosting

  • 2 Tbsp butter
  • 2 Tbsp cream cheese
  • 6 oz full-fat Greek yogurt
  • 1 cup powdered sugar
  • dash vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare an 8-inch pan or three 6-8 inch cake rounds with grease and parchment.
  2. In a mixing bowl, combine the maple syrup, mashed bananas, coconut oil, vanilla extract, and eggs, mixing well.
  3. Add the flour, pulsed oats, baking powder, baking soda, cinnamon, and salt, stirring until just combined.
  4. Pour the batter into the prepared pan and bake for 30 minutes or until cooked through.
  5. Allow the cake to cool completely.
  6. For the frosting, mix the butter and cream cheese until smooth, then add the Greek yogurt, powdered sugar, and vanilla, mixing until combined.
  7. Frost the cooled cake as desired, keeping it refrigerated if not served immediately.
