Ingredients

The filling

  • 1 lb lean ground turkey
  • Tbsp vegetable oil
  • ¾ cup chopped bell pepper
  • 2 tsp minced garlic
  • tsp peeled and minced ginger
  • cup diced green onions
  • 2 cups shredded green cabbage
  • 1 cup matchstick carrots
  • 1 Tbsp soy sauce
  • tsp sesame oil
  • ½ tsp Chinese five spice

The wrappers

  • 20 pieces egg roll wrappers
  • 1 egg beaten egg
  • 6-8 cups vegetable oil for frying

For serving

  • to taste sweet and sour sauce or other Asian dipping sauce

Instructions

  1. Brown the ground turkey in a skillet and transfer to a plate.
  2. Sauté the bell pepper in the same pan, then add green onions, garlic, and ginger, followed by cabbage and carrots until wilted.
  3. Combine the turkey with the sautéed vegetables, soy sauce, sesame oil, and Chinese five spice, then cool the mixture.
  4. Lay out an egg roll wrapper, place filling in the center, and seal with beaten egg.
  5. Fold and roll the wrapper tightly to enclose the filling.
  6. Heat oil for frying to 370 degrees and fry the egg rolls until golden brown.
  7. Alternatively, bake the egg rolls at 425 degrees until crispy.
