Ingredients

The sauce

  • 3 Tbsp soy sauce
  • 3 Tbsp low-sodium chicken broth
  • tsp cornstarch
  • 1 Tbsp sesame oil
  • 1 Tbsp brown sugar
  • 2 tsp sriracha

The stir-fry

  • 2 Tbsp olive oil
  • 1 lb 93% lean ground turkey
  • Salt to taste
  • 1 small yellow onion
  • 1 medium red bell pepper
  • 1 Tbsp fresh ginger
  • 4 cloves garlic
  • 6 cups shredded green cabbage
  • cups matchstick carrots
  • ¼ cup chopped green onions

Instructions

  1. Whisk together 1 Tbsp soy sauce with cornstarch in a small bowl, then mix in remaining ingredients for the sauce and set aside.
  2. Heat 1 Tbsp olive oil in a skillet, add half the ginger and garlic, and sauté briefly.
  3. Add ground turkey, season with salt, and cook until done. Drain and keep warm.
  4. In the same skillet, heat remaining oil and sauté onions until softened.
  5. Add bell pepper, remaining ginger, and garlic, and sauté for a minute.
  6. Toss in cabbage and carrots, pour the sauce over, and cook until cabbage is tender.
  7. Return the cooked turkey to the skillet, adjust seasoning, and serve topped with green onions and sriracha.
