Sauce

  • 2 tablespoons soy sauce
  • 2 teaspoons chili garlic sauce
  • 2 teaspoons honey (optional)
  • 2 teaspoons rice vinegar

Other

  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 cup shredded carrots
  • 3 cups shredded cabbage
  • ΒΌ medium red onion (shredded or thinly sliced)
  • 2 large eggs
  • 1 cup sliced pea pods
  • 1 tablespoon sesame seeds

Instructions

  1. Whisk together all sauce ingredients in a small bowl and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add ground turkey to the skillet and cook until no longer pink, breaking it into small pieces.
  4. Stir in shredded carrots, cabbage, red onion, and the sauce; cook for 3-5 minutes, stirring occasionally.
  5. Push the mixture to one side of the pan and scramble the eggs in the empty space.
  6. Once the eggs are cooked, fold them into the turkey and vegetable mixture.
  7. Add pea pods and cook for an additional minute.
  8. Remove from heat and serve topped with sesame seeds, green onion, and cilantro, if desired.
