Instructions
- Whisk together all sauce ingredients in a small bowl and set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey to the skillet and cook until no longer pink, breaking it into small pieces.
- Stir in shredded carrots, cabbage, red onion, and the sauce; cook for 3-5 minutes, stirring occasionally.
- Push the mixture to one side of the pan and scramble the eggs in the empty space.
- Once the eggs are cooked, fold them into the turkey and vegetable mixture.
- Add pea pods and cook for an additional minute.
- Remove from heat and serve topped with sesame seeds, green onion, and cilantro, if desired.
