Vanilla Plum Jam

Ingredients

  • 4 cups plums, pitted and halved
  • ½ cup agave nectar or honey
  • 1 tablespoon arrowroot powder
  • 1 tablespoon water
  • 10 drops stevia
  • 1 unit vanilla bean

Instructions

  1. In a large covered saucepan, bring the plums, agave, and vanilla bean to a boil.
  2. Lower the heat, uncover the pot, and simmer for 15 minutes until the plums are dissolved.
  3. Cook for an additional 10 minutes to reduce the mixture, then stir in the stevia.
  4. Remove the vanilla bean, place the plum mixture in a Vitamix, and puree on the highest setting.
  5. Transfer the mixture back to the pot and reheat on the stove.
  6. In a small bowl, combine the arrowroot powder and 1 tablespoon of water to make a slurry.
  7. Bring the plum mixture to a boil, then add the arrowroot slurry, stirring continuously until incorporated.
  8. Remove from heat, cool, and transfer to mason jars.
  9. Store in the refrigerator for up to one week.
