Vanilla Plum Jam

Instructions
- In a large covered saucepan, bring the plums, agave, and vanilla bean to a boil.
- Lower the heat, uncover the pot, and simmer for 15 minutes until the plums are dissolved.
- Cook for an additional 10 minutes to reduce the mixture, then stir in the stevia.
- Remove the vanilla bean, place the plum mixture in a Vitamix, and puree on the highest setting.
- Transfer the mixture back to the pot and reheat on the stove.
- In a small bowl, combine the arrowroot powder and 1 tablespoon of water to make a slurry.
- Bring the plum mixture to a boil, then add the arrowroot slurry, stirring continuously until incorporated.
- Remove from heat, cool, and transfer to mason jars.
- Store in the refrigerator for up to one week.
