Gingerbread Energy Bites

Ingredients

The base

  • 1 cup walnuts, or almonds or cashews
  • 1 cup dates, pitted
  • 1 cup Bob's Red Mill Gluten Free Organic Old Fashioned Rolled Oats

The flavorings

  • 1 tablespoon molasses
  • ¾ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • pinch sea salt

Instructions

  1. Soak the dates in hot water for about 5 minutes, then drain and chop them.
  2. Grind the oats in a food processor for about 1 minute until almost ground down.
  3. Add the soaked dates and all other ingredients to the food processor and mix until it forms a thick, slightly sticky dough.
  4. Roll the mixture into round balls using a tablespoon, making about 18-20 bites.
  5. Optional: Roll the bites in toppings or dip in chocolate if desired.
  6. Place the energy bites in the fridge for at least an hour to set before enjoying.
