Mediterranean Flatbread Pizza

Instructions
- Whisk together yeast, sugar/honey, and ½ cup warm water in a stand mixer and let sit for 10 minutes until foamy.
- Mix in flour, salt, and the remaining cup of water on medium speed until a dough ball forms, adding more flour or water if necessary.
- Cover the dough with a damp cloth and let it rise for 1 hour.
- Preheat the oven to 425°F and place a pizza stone inside to heat.
- Dust a cutting board with flour and transfer the dough to it, shaping it into a flat layer about ¼ inch thick.
- Transfer the dough to the preheated pizza stone and brush with olive oil.
- Spread pesto sauce over the dough and layer with artichoke hearts, olives, and hearts of palm if using, then sprinkle with fontina cheese.
- Bake for 8-10 minutes until the cheese is melted and bubbly and the crust is lightly browned.
- Allow to cool slightly, top with spinach leaves, slice, and serve.
