Mediterranean Flatbread Pizza

Ingredients

Pizza Dough

  • ¼ ounce instant yeast
  • 1 teaspoon granulated sugar or honey
  • 1 cup warm water
  • 3 cups whole wheat pastry flour
  • 1 teaspoon coarse salt
  • 2 tablespoons olive oil

Pizza Toppings

  • ¼ cup pesto
  • 2 ounces thinly sliced prosciutto
  • ½ cup marinated artichoke hearts, quartered
  • ½ cup pitted Greek olives
  • ½ cup sliced hearts of palm (optional)
  • 4 ounces fontina, shredded
  • 1 handful fresh baby spinach

Instructions

  1. Whisk together yeast, sugar/honey, and ½ cup warm water in a stand mixer and let sit for 10 minutes until foamy.
  2. Mix in flour, salt, and the remaining cup of water on medium speed until a dough ball forms, adding more flour or water if necessary.
  3. Cover the dough with a damp cloth and let it rise for 1 hour.
  4. Preheat the oven to 425°F and place a pizza stone inside to heat.
  5. Dust a cutting board with flour and transfer the dough to it, shaping it into a flat layer about ¼ inch thick.
  6. Transfer the dough to the preheated pizza stone and brush with olive oil.
  7. Spread pesto sauce over the dough and layer with artichoke hearts, olives, and hearts of palm if using, then sprinkle with fontina cheese.
  8. Bake for 8-10 minutes until the cheese is melted and bubbly and the crust is lightly browned.
  9. Allow to cool slightly, top with spinach leaves, slice, and serve.
