Steamed Dumplings

Ingredients

The filling

  • 4 ounces tempeh
  • 1 tablespoon extra-virgin olive oil
  • 6 ounces shiitake mushrooms
  • 1 tablespoon tamari
  • ¼ cup chopped scallions
  • cup finely chopped kimchi
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon grated ginger
  • ½ teaspoon sriracha

The wrappers

  • 35 pieces dumpling wrappers

For serving

  • to taste tamari or chili oil

Instructions

  1. Steam the tempeh for 10 minutes, then crumble it.
  2. Sauté the crumbled tempeh with diced shiitake mushrooms and tamari for a few minutes.
  3. Combine the sautéed mixture with scallions, kimchi, sesame oil, ginger, and sriracha in a bowl.
  4. Scoop a heaping teaspoon of filling onto each dumpling wrapper, dab edges with water, fold and seal.
  5. Pleat the sealed edge of the dumpling wrapper.
  6. Place dumplings in a bamboo steamer over simmering water and steam for 10 minutes.
  7. Serve immediately with tamari or chili oil for dipping.
